I am wondering if it is just sweetened coconut with green food coloring? You mentioned trying food coloring but it tasted not right….. but, perhaps in Britain…. Do they SELL shredded coconut that has been sweetened? In the US you can by natural shredded coconut but also sweetened shredded coconut for baking. The sweetened variety is not just sugar or syrup but has “something else” that adds to the flavor a bit. I suggest this as the images are fluffy but also appear a bit sticky at the same time.
Perhaps that may be what the tray has that you like?
